Hey!
I am mexican and have decided to share whatever recipes I might have with people who are recently begining to cook, and love mexican food, being mexican I love it to, and so I realize how hard it is to cook, so I have made the recipes as traditional and simple as I could.
Feel free to look around, besides the mexican recipes I also have a variation of different things, most of them are mexican though.:D

Mexican Baked Macaroni (Macarrones yucatecos).



This is a great garnish for a christmas meal, in Mexico we cook it along with the traditional romeritos with mole, I'll upload the recipe soon!




Serves 4.



Ingredients:






500 gms Macaroni

Butter (as much as you may need)

Olive Oil (as much as you may need)
Tomato sauce 2 big cans
Grated Cheddar Cheese 2 cups
Breadcrumbs 1 cup
Salt






Instructions:



Preheat oven to 250 degrees

Cook the macaroni following the instructions of the package.

Place a saucepan in high heat and add four spoons of olive oil, when the oil is hot add the tomato sauce and cook for at least ten minutes or when the sauce changes color(you can season the sauce to your taste), add the salt. Remove from heat and let cool.
In a big bowl place the breadcrumbs and the cheese and mix them with your hands well.
Take a large oven refractory and grease it well with butter, then add a thin layer of tomato sauce, then a layer of macaroni, using half the macaroni.
Put some sauce on top of the macaroni so that it covers it completely, then add half the mixture of cheese making sure that it is spread evenly, take three spoons of olive and spread them over the first layer, then cut some small pieces of butter and spread them. Repeat the operation with the other half of the ingredients.
Bake in the oven until the cheese is a brownish color.
Let cool for five minutes then serve warm.

Note:Kids love this, just remember that you have to be very generous with the cheese.



You can also change the cheese you use, I prefer the cheddar because it sticks more to the original recipe.

Very delicious recipe. this is one of the rarest recipes i have seen which have no chillies in them. Otherwise all the thai and mexican foods are very spicy

Here is a recipe I found:

QUESO BLANCO

A white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses 'Jack' for the TexMex version and Chihuahua and/or Asadero for the more traditional Mexican version.
1 cup cheese (Monterey jack, Asadero or
Chihuahua), shredded fine
4 ounces green chiles
1/4 cup half-and-half
2 tablespoons onion, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 Serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)
Put all ingredients in a double boiler and heat on medium. Cook until melted and well blended, stirring occasionally.
Serve with fresh tostadas or hot flour tortillas.
